Chicken & rice salsa verde- thing. Cooked the chicken & rice in the crockpot (knock off), with chicken stock, a jar of salsa verde, garlic & onions, & hatch chilies the day before. Wrapped it in tortillas & baked it in the oven on my last break. Ready to eat after work. Look how clean the pan is!

Roasted chicken thighs that soaked in Olive Garden dressing (Costco is selling 3 packs for cheap). Made jasmine rice, mixed with corn off leftover corn on the cob. Added broth from the roasting pan. Then realized I had zero appetite. 🤷♂️
