I’ve found intermitently adding water to cocoa powder and stirring until dissolved, then adding this to brewed coffee (taste as you go), helps control the mocha mix until you find your desired combination. I’ve also tried keeping dissolved cocoa in the fridge for a handy add-on. Hope this helps.
