Unironically, the best I've ever felt at parrying is in Sekiro, and I think it's because the game gives you a lot of wiggle room to get it right and attacks are rhythm based. Which, for me, actually is harder since I have no rhythm, but Sekiro really made parrying feel so good while being easier.
