There’s a lot to be said for putting potatoes in pastry. Our potato, leek and shallot galette puts three of this year’s garden crops to good use, all grown organically. Growing the ingredients takes considerably more patience than eating the result.
Show PostPrickly pears spotted in Lefkes, Paros, growing on the broad green cactus pads. When ripe, the flesh is sweet and juicy, between watermelon and pear, and plenty little seeds. Picking one takes a bit more care - as I found out the hard way.
