Real shit! That's why a lot of places don't say "gluten-free", but "gluten-friendly". A person with a sensitivity like me can eat a few particles of gluten, a person with celiac will react to any amount, thus the need for dedicated bakeries.

No it doesn't. Most places selling GF menu items don't use a supply chain or kitchen that controls cross contamination from field to plate so it is still unsafe for coeliacs. There is more to producing GF food than just replacing wheat flour with alternatives.
