If they all go offline tomorrow, difficulty adjustment would adjust the hash difficulty and the solo miners would carry on!

But Bitcoin miners are very highly incentivized to use and find untapped energy sources where cost of kWh is very low, such as byproducts from existing production plants, wasted heat output, gas flaring, etc. Hydro, nuclear, and solar are sought most.
