When your brain understands that this is an infusion step not a cooking step I genuinely believe you become a meaningfully better cook
Show PostOk but for real I feel like this is not communicated clearly to most home cooks: the reason so many recipes open with soften/brown onions/garlic/etc in fat SLOWLY over MED-LOW heat is bc the goal is NOT to cook the aromatics—that’s just a side effect. The goal is to infuse the fat w their flavor!
