You honestly brightened my day with the phrase "I'm making a video about bananas.". Potassium-40 β decay creates position, e+ annihilates with an e- and produce γ-photons with energy ~2xe- mass. Faithfully communicating QM/particle physics without descending into infinite recursive nuances is hard.

... fundamental physics questions. Beta decay is mediated by the weak force and can create antimatter leptons (positrons, antineutrinos) but it cannot create antimatter baryons (insufficient energy & baryon number conservation). So there is no chance anti-hydrogen could form from just beta decay.

Although all other known fermions have distinct antiparticles, the question of whether anti-neutrinos are a distinct particle or whether the neutrino is its own antiparticle is a current research goal. If they are auto-anti-particles, neutrinos would be Majorana particles and that would answer...
