I just cooked a pizza with rehydrated black trumpets, assorted chanterelles, and porcini. It was divine! All I did to rehydrate was soak in water. None were tough.

Decided to base a new story on mushrooms, and had to choose between the first eight mushroom reference volumes we just happened to have on hand. Benefits to an obsessive spouse. (Others include fresh chanterelles, dried morels, porcini powder, pickled slippery jacks...)
