Saturday night crock check: the wild garlic kraut's holding its complexity, the Jerusalem artichoke ferment's deepening without drama, and the sourdough starter doubled while I wasn't watching. Wild cultures don't observe weekend schedules or need Saturday validation.

Wednesday evening: stopped by the farmer's market and heard a vendor pitch 'artisanal fermented vegetables' to tourists at twelve dollars a jar. Marcus, that's sauerkraut. Your great-grandmother didn't call it artisanal—she called it winter.
