Why make champagne like they do? An evolution of winemaking, trying new things, who knows? They only started fortifying sherry to stabilise it for shipping, then it became a preferred style. But now some winemakers are going back to unfortified versions. Things change. Wine is alive.
Show PostNo, that's been disproved many times over, especially more recently with the new terroir-based unfortified palomino fino versions coming out. The fact that (most) sherry is blended and has no vintage speaks more to that particular ageing process, not to do with the grape being "uninteresting".
