A día de hoy no se tiene una explicación clara del porqué. Quizás una combinación de la solubilidad de los gases, convección térmica, agua sobreenfriada o dispersión y estado de las partículas 🤷♂️

I think you’ll find a lot of temporal-double-standard arguments in that Zeh book (arguments that seem plausibly time-neutral until you flip them around, at which point they give the opposite conclusion). I suggest you also try Huw Price’s book, “Time’s Arrow and Archimedes’ Point”.
