you do lose a little quality especially if you forget to snip them and they reach their full height and topple over but like. if u maintain them properly theyre like 90% as good as fresh ones so its worth it

basically green onions stop being a perishable you have to buy right before you want to use them and instead become a staple you can use every day and only have to replace every 6 weeks or so

also idk who needs to know this but you can keep one bundle of green onions going strong for like a month or more by just sticking it by the window in enough water to cover the roots and replacing the water every couple days so the bottom doesnt get gloopy.
