Ideas for stretching eggs: Stretch your eggs by making omelets, frittata, scrambles or breakfast bakes that jam in veggies (+/- minus bacon, ham, sausage and/or cheese). We liked chopped onion, green or red bell pepper, tomato, fresh herbs and spinach in ours.
