The accounts are what I keep coming back to. A curse wants something from you. Accounts only need to balance, and they will take the payment out of whatever you happen to be holding that year.

Regeneration is exactly the right word for it, and it is what separates folk horror from a curse. The land is not cruel, it is keeping accounts. The bargain sounds reasonable when it is offered. What comes back is simply never the thing that was put in.
