This concept is fasinating, not sure I understand completely, but I wonder is geographical location, or population density plays a factor, and if you were living a place with more trees, and/or oxygen pumping peat moss bogs could increase the nutritional value of the food you grow 💚🌱☃️🌲😃

#fermentation We had to harvest a lot of underripe grapes due to a bear in the neighborhood. We made as much verjuice as we can handle already, and are steam juicing the remainder. Any suggestions for what to do with it? Can it make decent vinegar?
