Time to learn a thing: When you increase your dietary carbs (and overall calories), your body gets extra glycogen. Glycogen is stored in the muscles (and liver). Glycogen is hydrophilic and binds with 3ish times its own mass in water. So you see a spike in water weight! It will even out with time.
