한국의 배는 서양 배(ph 3.5-4.6)와 품종이 다르고, 산도 또한 다르며(ph 5.23-5.59), 과일의 깨끗한 단맛을 갖습니다. 전통적으로 요리에서 두 가지 작용을 합니다. ⓐ 단맛: 현대에는 설탕으로 대체 가능합니다. (양파를 갈아 넣기도 합니다.) ⓑ 연육작용: 사과, 키위, 파인애플로 대체됩니다. 이 경우 과일은 소량만 사용합니다. 또한 한국의 배는 그 깔끔한 단맛 때문에 셔벗과 주스로도 활용됩니다. 숙취해소에 탁월합니다.
