the one i use: chop up good roasting veggies (carrot, potato, mushroom, onion, celery etc) and seitan. add minced garlic, oil, bit of stock, and a bit of wine. fresh rosemary, sage and/or thyme if you have them, if not dried is fine. stir, cover with foil & roast 45 min @ 450, then uncovered for 15
