I also think that you can see something interesting in Angel, both ensouled and demonic. The thing that Angel is always most interested in, at all times, is pain. When ensouled, he's very entranced with his own pain. It blinds him, actually, to the pain of those he allegedly loves.

Which brings me to the second question. What, in the Buffyverse, is a "soul"? I would argue that it is the ability to feel remorse. Not regret. Demons, and vampires specifically, can clearly regret making choices. They can also care about other creatures; Spike loves Drusilla.

In exactly the same way that I remember sexually harassing Mitch, or saying super racist things to Pam, they remember the things they did as a vampire. Man, I wish I could forget that I had done those things. But, well, I did them. They exist as part of my internal narrative of myself.
