Didn't want to sound despising tho. But yeah, caramelized onions, ginger&garlic paste, par cooked carrots and potatoes, and stock of your choice and golden curry pre made curry blocks is the way japanese families do it. Stewed beef, fried chicken or pork cutlet, or vegetarian. Your choice 👌

Maybe you went to a shitty place, or ordered something without vegetables, I dont know man There's carrots and potatoes in every basic japanese curry recipes
