Endurance by Alfred Lancing was the first one I read. Many moons ago, I ran a bookshop in Hay-on-Wye which, amongst other things, included a small section on polar exploration. I read pretty much every book on the shelf and been a bit of a nerd for it ever since!

I like this one from the Scott Polar Institute in Cambridge. A replica of the small boat Shackleton and a few of his crew rowed through towering seas to South Georgia to help secure the rescue of the rest of his crew. An incredible story.
