I've been cooking a lot with chickpeas lately. Crispy roasted chickpeas, homemade hummus, and chickpea and sweet potato curry over rice.

I am willing to bet it was chickpea juice whipped into ‘meringue’ which is a legit vegan recipe and quite successful in the right context, plus chickpea flour, so it would not get claggy the way mashed legumes would
