It's also true that English has set expressions which just need to be learned, and "at night" is probably one of them - but I can't agree that this expression is incoherent. We say at night, at dawn, at 2 o'clock. It's fairly coherent. We also say in the night, in the day, in the 2 o'clock hour

Perhaps from the point of view of a second language speaker it makes sense to talk about inconsistencies or a lack of coherence in how English uses the word "the", I'm not sure that actually applies in this case. It's simply the case that LA and THE are different words used differently.
