Now we roll! I add the chicken mixture and a little cheese before rolling up. Make sure the tortillas are warm and soft. Once they’re rolled, top with the remaining sauce and shredded cheese. Will bake at 375 until the top is bubbly and browned. ☺️🍽️🍜

Now for the sauce. I roasted tomatillos, onions, garlic & a jalapeño until charred. Tossed the veggies into the mixer with cilantro & lime juice & blended. Dumped salsa into a pan & added a block of cream cheese, 1/2c milk, & 1/2c cream cheese. Cooked down on low until melted together.

Dad called dinner. Grilling dogs and foil pack potatoes with some baked beans. Good times with the Weber Kettle.
