My car can put the map from my phone on the big screen and still has buttons and knobs for HVAC (I didn't even bother looking at touch screen only cars) I think there's controls on the wheel for radio but I've never really looked because I just have my phone play from my local collection.

I also hate touchscreens, but my car is relatively new, so I choose the maker (Mazda) because it didn't come with a touchscreen infotainment system, has Android Auto, and everything is controlled via knobs, including the Android Auto/Car Play, and it's in an intuitive way that's very easy to use.

Yes, they're not mutually exclusive in the slightest My car is one of many examples where HVAC is on a dedicated panel. The only "you must use the touch screen" feature I have to put up with is controlled the heated/ventilated seats and steering wheel. Thankfully that's rare and there a shortcut
