My late stepmum was coeliac & for many years I baked gluten-free cakes, made puddings & pasta. Suitable ingredients are much easier to find now than they were 30yrs so it really isnt that hard. I baked the gluten-free wedding cake when she & my dad got married. I am sorry your family isnt trying.
