Come to think of it, when I was a kid, our grocery store had excellent bagels, but only on Sunday morning. Pretty sure they were not made in-house, though.

I live in an area (the Chicago north shore suburbs) with very wild splits in bagel quality/authenticity (deeply Jewish areas with lots of NYC transplants, interspersed with the WASPiest places I’ve ever seen). Sometimes the bespoke delis are less able to make decent bagels than the grocery stores!

I have considered this as well (the boiling - I didn’t know about barley malt). But how come *nobody* does it? Is there no market for real bagels in Texas?
