Postu gösterI did think about using Kveik, I used it a lot at the brewery over quite a few years and even had my own/mutated strain. But I'm after either trying to get a *very* clean ferment, or to try and stay as traditional as I can.
Postu gösterYeah, getting rice here is a major issue. I've been using a short grain sushi rice which is giving pretty good results. The enzyme I'm buying in and using is pretty much the same as the fungal spore on koji rice, and is designed really to make Brut IPAs, so koji in the fv isn't that weird 🤣
