You can definitely taste the honey (I used the more liquid type for ease), and including the homemade pumpkin puré they were defo a lot of work but they were absolutely delicious and I will do them again.

The spices I added to the batter were anise, a tsp of ginger, nutmeg, pinch of pepper, cinnamon, and cardamon. I mixed it with a hand mix and, after working the butter, with only one whisker (the wavy type) and only in one direction to incorporate more air.

They were well cooked and airy and melt-in-the-mouth soft. The syrup was just a tsp per muffin, made today (water + sugar + persimmon + cinnamon and cardamon)
