I made tacos for dinner. I fine-diced an onion and a jalapeno and ten plum tomatoes for pico de gallo and I scorched black beans and corn in a skillet with lime juice and taijin and did up a tofu crumble with hand-mixed seasonings. 50/50 tortillas. best Taco Tuesday ever.
