Jedes Mehl ist anders und der Sauerteig auch. Ich backe auf Sicht und Nase. Mit der Zeit klappt das immer besser. Auch wenn jedes Brot ein bisschen anders ist. Sauerteig ist lebendig und hat so seine eigenen Vorstellungen. 😉
