Is there a _general_ word for the in-group behaviour of doing something 'wrong' to signify status? eg1: HR people who insist on emphatically saying Haitch Arr. eg2: influencers pinching lapel mics in front of their faces, almost always with a redundant fur baffle? Just another type of shibboleth?

not really - that's usually trying to project a higher status. Here the dynamic is downward: do something 'wrong' and I dare you to reveal your unacceptable elitism by doing it 'right'

Related: a videographer I know rigs up a vast barn-door/filter contraption on the front of the camera - almost entirely to look more impressive, rather than serve a functional purpose. It's even called "the client box". Nobody will pay 'big camera' fees for someone waving a Pocket 4.
