If you've got an old Windows PC laying around, theres a little piece of software called LCARS 47. It's been abandoned for a long time unfortunately but the last version (6.3) should still be floating around. It was an Interactive LCARS simulator prop effectively. That screen was remade in there!

I can't remember if it was in TOS or TNG but when actors asked what console buttons to press the reply was "any you want, but do it with confidence. All the crew customize their interface." Brilliant excuse and sets up things like this.
