the secret to making great risotto, and I say this as a meat-eater, is to never put meat in it. fish, shellfish, sure. but not a lot of it, even at that. let the starch of the arborio rice and the veg and the herbs shine. risotto on the SIDE of a meat dish, sure. but not meat IN risotto, imo.

Sometimes I pause and just feel amazement that we do this. Here, in this country, with all our problems, one night a year kids can knock on any stranger's door and get a year that we specifically bought for them. It's a fleeting but beautiful moment of community. I love this holiday.
