scrollwheel while holding right click allows you to change the freelook speed on the fly. for general tuning: editor settings/editors/3d has loads of exposed settings for viewport navigation, navigation feel and freelook values

I believe there are editor settings for that (can't remember off the top of my head which ones or where)! But also, you can use the mouse wheel while flying around to change speed.
